Baked Fish with Feta and Tomato

2 pacific whitening fillets
1 scallion, chopped
1 Roma tomato, chopped
1 tsp fresh oregano
1-ounce feta cheese, crumbled
2 tbsp. avocado oil
1/3 tsp salt
1/4 tsp ground black pepper
¼ crushed red pepper

  1. Turn on the oven, then set it to 400 degrees F and let it preheat.
  2. Take a medium skillet pan, place it over medium heat, add oil and when
    hot, add scallion and cook for 3 minutes.
  3. Add tomatoes, stir in ½ tsp oregano, 1/8 tsp salt, black pepper, red pepper,
    pour in ¼ cup water and bring it to simmer.
  4. Sprinkle remaining salt over fillets, add to the pan, drizzle with remaining
    oil, and then bake for 10 to 12 minutes until fillets are fork-tender.

When done, top fish with remaining oregano and cheese and then serve.
