Salmon Sheet pan

Cooking Time: 20 minutes
2 salmon fillets
2 oz. cauliflower florets
2 oz. broccoli florets
1 tsp minced garlic
1 tbsp. chopped cilantro
2 tbsp. coconut oil
2/3 tsp salt
¼ tsp ground black pepper
- Turn on the oven, then set it to 400 degrees F, and let it preheat.
- Place oil in a small bowl, add garlic and cilantro, stir well, and microwave
for 1 minute or until the oil has melted.
- Take a rimmed baking sheet, place cauliflower and broccoli florets in it,
drizzle with 1 tbsp. of coconut oil mixture, season with 1/3 tsp salt, 1/8 tsp
black pepper and bake for 10 minutes.
- Then push the vegetables to a side, place salmon fillets in the pan, drizzle
with remaining coconut oil mixture, season with remaining salt and black
pepper on both sides and bake for 10 minutes until salmon is fork-tender.
